(HINT!) I wear food safe gloves I coat with oil to mix the dough up.

Once it is well combined and looks even in color/texture, begin to form your bagels.

Break off a section and roll out between palm and surface to a long fairly thin log. Fold into bagel shape and squeeze end to close. Continue until you have all your bagels made. Use the one leftover egg to make an egg wash. Coat each bagel with egg wash and top with toppings of choice.

Some ideas: everything but the bagel seasoning, sesame seeds, salt, garlic, onion, cinnamon/sugar, whatever makes you happy!

Bake in a preheated 400F/200C oven for 12-15 minutes then cool completely.

This base fathead dough can be used for bagels, pretzels, cinnamon rolls, pizza crust, dinner rolls. Very easy and versatile!

Fathead bagels

Ingredients:

3 cups mozzarella, shredded

1 3/4 cup almond flour

1 TB baking powder

3 eggs, separated

2 oz cream cheese

Directions:

Mix mozzarella and cream cheese in bowl. Microwave for 1-2 minutes, stirring, and continue heating for 30 second intervals until softened and mixed.

In a separate bowl mix almond flour, baking powder, and 2 eggs. Stir to combine to a rough dough.

Add in melted cheese mixture - this will be sticky and take a bit.
